panko crusted green bean fries

Ingredients
- ½ lb. green beans, trimmed
- 1 cup flour
- 1 egg
- ⅓ cup skim milk
- 3 cloves garlic pressed in a garlic press
- 1 and ½ cups panko bread crumbs
- ½ cup finely grated parmesan cheese
- 2 tablespoons melted butter
- 2 teaspoons paprika
- salt and pepper, to taste
- Preheat oven to 425 F.
- Fill a large pan with 2-3 inches of water and bring to a boil. Prepare a large bowl of ice water and set aside.
- Blanch the beans for 3 minutes and immediately submerged in ice bath.
- To prepare beans you will need three bowls. In the first bowl, combine the flour paprika, salt, and pepper.
- In the second bowl, combine the egg, milk, and garlic, whisking to combine.
- In the third bowl, place the panko and cheese.
- Remove 2 tablespoons of the flour mixture and whisk into the egg/milk mixture.
- Pat the beans dry and cover in the flour mixture, then into the milk mixture, and finally into the panko mixture to coat.
- Arrange the beans in a single layer on a baking sheet lined with parchment paper.
- When all beans are on the pan, lightly drizzle melted butter over each.
- Place beans in oven and cook for 15 minutes, or until slightly browned.
